Community Cocina: Cachapas

On Thursday, August 15th, QLatinx's Community Cocina program visited Venezuela and prepared delicious and gooey Cachapas! Cachapas are an integral part of Venezuela’s culinary history, with origins rooted before western colonization. Cachapas are traditionally eaten with queso de mano, but they can be evolved to including some kinds of cheese, milk cream, or jam.

 

Recipe can be found below:

Cachapas Ingredients

  • 2 (15.25 ounce) cans whole kernel corn, drained

  • 1/4 cup milk

  • 1/4 cup masa harina

  • 1 egg

  • 2 teaspoon white sugar

  • 4 tablespoons vegetable oil

  • 1/2 teaspoon salt

Cachapas Preparation Instructions

  • Blend corn, milk, egg, masa harina, sugar, and salt together in a blender until the mixture has the consistency of pancake batter.

  • Heat oil in a large skillet over medium heat.

  • Add batter to the heated skillet and form the size of small discs, 4 to 5 inches around.

  • Cook until golden brown, about 2 minutes per side.

  • Repeat with remaining.

  • Garnish with queso de mano, cilantro, your choice of protein, and/or jam.
