Community Cocina: Haitian Rice with Pork

Tonight marks yet another phenomenal evening with Chef Mira Johnson and QLatinx! We are incredibly thankful to everyone that came out to join us for this highly informative and intimate experience. A special thank you to our friends at the Orlando United Assistance Center for continuing to open their doors and make their home our home.

 

This evening we learned all about the traditional method of making a highly delicious, hearty, and flavorful classic Haitian Rice with Pork dish. Chef Mira shared that this recipe was passed down to her by a Haitian Abuela who asked if she would be able to prepare this dish for her granddaughter to enjoy on her wedding day. This aromatic rice is filled with veggies, beans, spices and bacon. Its slowed cooked and served with yellow plantains and coleslaw salad. Haitian Rice with Pork

  • Prep Time: 15 Minutes

  • Cook Time: 1 Hour

 

Ingredients:

  • 6 cups of white long rice 

  • 12 cups of water 

  • 2 cups of red beans 

  • 1 slab of bacon, chopped and browned 

  • 1 cup of chopped onions 

  • 1 cup of red bell peppers 

  • 1 tablespoon scotch bonnet or habanero peppers 

  • 1 tablespoon ground cloves

  • 1 tablespoon salt

  • 1 tablespoon pepper

  • 1 tablespoon olive oil 

 

Directions:

  1. Heat olive oil in a large pot over medium-high heat.

  2. Brown the bacon, slowly adding the chopped vegetables and seasonings once the bacon has rendered.

  3. Add rice to pot and cook over medium-high heat for 25 minutes, add water and reduce heat to low and cover for 15 minutes.

  4. Stir until well blended.

  5. Serve with a side of coleslaw salad and fried yellow plantains.
